Course Objectives:
Students will be able to demonstrate some cooking skills associated with international and ethnic specific cuisines. The student will have a better understanding of international food sources, global culinary cultures and acquire a more in-depth artistic appreciation of food preparation techniques as well as terminology. Also, students will learn appropriate dining etiquette from different cultures.

Chicken bouillon (stock) 3/4 to one cup
1/2 cup green salsa
Green tomatillos
Black ground pepper
1 cream cheese bar - medium size
Tortillas are from Trader Joe’s- de mi abuela corn and wheat - or corn tortillas from the farmers market, but these are thinner
GREEN SALSA
Green tomatillos (20)
Salt to taste
One jalapeño pepper with seeds take off top
One cilantro handful
Cook the green tomatoes without the skin in water with the onion, the pepper and salt for around 10 minutes or until the tomato changes from dark- emerald green to a different shade of green, like more olive color. Then add the cilantro handful for one minute. Drain water and blend all the cooked ingredients - taste salt. Add more salt and if you desire for it to be very hot add another cooked jalapeño pepper.
Chicken bouillon
Cook one or two chicken breasts with salt, pepper to taste 1/4 of an onion, a branch of fresh cilantro for at least 20-25 minutes - let cool and shred - reserve the broth
Poblano pepper strips
Line tray with foil or oven bag
Brush peppers with vegetable oil, bake in the oven at 420F for half an hour to 40 minutes or until the skin has bubbles under it (at 20 minutes turn peppers to the other side so skin cooks evenly and becomes easier to peel)
Put inside oven bag to sweat for 5 minutes.
Peel skin and throw away seeds and veins under warm water. It should almost be detached and easy to peel.
Cut the clean pepper in strips.
Green poblano tomatillo Sauce for Tacos or enchiladas, tortilla chips (chilaquiles) chicken or fish:
Mix 1/2 cup of green salsa, 1 cup of chicken bouillon, 300 ml of Mexican sour cream, 1 cream cheese bar, 1/2 to 1 cup of poblano pepper strips (baked without seeds or veins)
Mix in blender - taste add more salt if needed.
Serve this sauce over tacos, you can mix half of it with shredded chicken and the other half over tacos, just before serving so tortillas don’t soak and fall apart.
Tortillas can be pre cooked on the pan, it needs to be very hot and you can add a few drops of oil so they are harder and hold the chicken filling better. Cook on one side until they start bubbling or inflating and then turn. You can use thongs so it’s easier.
Fill tortillas with two spoonfuls of shredded chicken and roll close to each other so you can cook for a few minutes in the oven and they dry a bit. You can add the rest of the salsa, more grated cheese - manchego or mozzarella so you serve them grated.
